Starter

Boil the arborio rice in salted water until soft.
Drain the rice well.
Stir grated mozzarella, grated Parmesan and black pepper into the rice.
Let the rice cool.
Combine chopped ham and butter to make the filling.
Spread the breadcrumbs on a plate.
Spread the flour on another plate.
Beat the eggs in a bowl.
Spoon cooled rice into your hand to form a disk.
Add some ham filling to the center of the rice.
Enclose the filling with rice to form a ball and set aside.
Repeat to shape the remaining rice into balls about the size of a small lemon.
Roll each ball in flour.
Dip each ball in the beaten eggs.
Roll each ball in breadcrumbs to coat.
Heat several inches of vegetable oil in a large pan.
Fry the balls until golden brown all over, turning occasionally.
Drain fried arancini on paper towels to remove excess oil.
Warm the marinara sauce.
Spoon sauce onto serving plates.
Place 3 to 4 arancini on each plate and serve immediately.
