Bring water to a boil in a large pot.
Stir in cassava flour, working out any lumps.
Add a small amount of water so it sits just above the cassava.
Cook over medium-high heat, stirring intermittently.
Cook and stir until the white paste dries out, thickens, and turns creamy (about 10 minutes or longer).
Sprinkle water as needed to prevent the fufu from becoming too thick.
Turn or fold the fufu to cook the other side and scrape pot edges or wooden turner if sticky.
Remove the fufu from the pot once it softens and becomes creamy.
Place the cooked fufu on a flat surface or tray and set aside for 5 minutes to cool.
Hand-mix the fufu and roll it into balls like dough.
