Cook millet according to package directions in water or vegetable stock; transfer to a medium mixing bowl and set aside.
Preheat oven to 350°F.
Toast walnuts in the oven until fragrant (about 8 minutes); cool, finely chop, and add to the millet.
Heat a large sauté pan over medium-high and add 1 tbsp olive oil.
Add corn and 1/2 tsp salt; cook until corn is vibrant yellow, about 4–5 minutes.
Add scallions, cook 30 seconds, then remove from heat and add the corn mixture to the millet bowl.
Return pan to medium-high, add 1 tbsp olive oil, then add cauliflower rice and 1/2 tsp salt; cook, stirring, until cooked through and beginning to brown.
Transfer cooked cauliflower to the millet mixture.
Wipe out the pan, add 2 tbsp olive oil and heat.
Add diced tofu and remaining 1/2 tsp salt; cook, stirring occasionally, until tofu browns and becomes crispy, about 7–8 minutes.
Remove from heat and add the tofu to the millet mixture.
Add chipotle to the millet-tofu mixture to taste and adjust seasoning (salt/pepper) as needed.
Add remaining 1 tbsp olive oil and toss to coat.
Divide mixture among serving bowls.
Garnish with sliced radishes and chopped chives.
Serve warm or at room temperature.
