Select one or more molds at least 3 in (10 cm) deep to hold about 8 cups total.
Stir 1¼ cups boiling water with one package gelatin in a small bowl for at least 2 minutes until dissolved.
Pour ¾ cup of the dissolved gelatin into the mold(s).
Refrigerate about 15 minutes until the layer is set but not firm.
Chill the remaining gelatin about 5 minutes until slightly thickened.
Gradually stir 3 tablespoons sour cream or yogurt into the thickened gelatin.
Spoon the sour-cream-mixed gelatin gently on top of the previous layer.
Refrigerate again about 15 minutes to set the new layer.
Repeat the layering process for each remaining flavor, cooling adequately between layers to prevent mixing.
Refrigerate the completed mold about 2 hours until firm.
Remove from mold, store refrigerated under wrap or foil, and serve slices perpendicular to the layers.
