Preheat oven to 450°F and position rack in center
Heat olive oil in a medium saucepan until shimmering
Add carrots, celery, and onion and cook, stirring, until softened but not browned
Add garlic and cook, stirring, until fragrant
Add lentils, bay leaves, water, and a pinch of salt
Bring to a simmer, cover partially, and cook until lentils are tender, topping up water if needed
Remove lid, stir in apple cider vinegar, and reduce until lentils are moist but not soupy
Season lentils with salt and pepper, cover, and keep warm
Halve eggplants and score flesh in a cross-hatch pattern
Place cut eggplants cut side up on a foil-lined rimmed baking sheet, brush each with olive oil, season with salt and pepper, and top each with a rosemary sprig
Roast eggplants until completely tender and well charred, then remove from oven and discard rosemary
Heat olive oil and pine nuts in a skillet over medium heat and cook, tossing, until golden and aromatic; transfer to a bowl
Stir half of the parsley and rosemary into the lentils and transfer lentils to a serving platter
Arrange roasted eggplant halves on top of the lentils
Spread tahini sauce over each eggplant half and sprinkle with toasted pine nuts
Sprinkle with remaining parsley and rosemary, drizzle with additional olive oil, and serve
