Pulverize shelled acorns in a food processor or blender into a fine meal.
Optionally toast the acorn meal 5–7 minutes at 375°F.
Transfer the acorn meal to a dish.
Place the egg whites in a shallow dish.
Coat each salmon fillet in egg white.
Coat each fillet with the acorn meal.
Transfer coated fillets to a slightly greased or non-stick baking sheet.
Bake at 425°F for 10–15 minutes, or until the fish is flaky when pulled apart with a fork.
Serve the baked fillets.
Heat a few tablespoons of oil in a frying pan over medium-high heat.
Add the coated salmon fillets to the hot pan.
Pan-fry the salmon 2–3 minutes per side, until the fish is flaky when pulled apart with a fork.
Serve the pan-fried fillets.
Serve over brown rice and/or add steamed vegetables and roasted potatoes to complete the plate.
