Pork

Combine pork, mustard, soy sauce, and minced vegetables in a bowl.
Knead the pork mixture against the bowl until cohesive and slightly mushy.
Cover dumpling skins with a damp towel to prevent drying.
Place about 1/2–1 tsp filling in the center of each wrapper.
Dampen the edge of the wrapper, fold to enclose the filling, and crimp to seal.
Freeze dumplings for storage or proceed directly to cooking.
Heat a heavy frying pan over medium to medium-high heat.
Brush the pan lightly with vegetable oil and add 8–10 dumplings without crowding.
Cook the dumplings undisturbed for at least 2 minutes until they stick to the pan.
When bottoms have browned, check for sticking.
When dumplings have stuck, pour about 1/3 cup stock/broth/water into the pan to roughly 1/8–1/4 inch depth and cover with a tight lid.
Cook until the liquid has been converted to steam (about 2 minutes), adjusting liquid if needed.
Remove dumplings from the pan and serve hot with dipping sauces.
