Combine brown sugar, molasses, ginger, cinnamon, and salt in a large saucepan.
Bring the mixture to a boil, then remove from heat.
Add baking soda and butter, stirring until the butter melts.
Quickly stir in the egg, then add the flour and mix until combined.
Chill the dough for several hours until firm enough to roll.
Preheat the oven to 325°F.
Roll out the dough thinly on a lightly-floured surface.
Cut into shapes with cookie cutters and place on a cookie sheet sprayed with non-stick cooking spray.
Bake about 15 minutes at 325°F, then cool on racks.
