Rinse and soak the beans overnight.
Scrub and rinse the clams.
Drain the beans and place them in a skillet with the onion, garlic, parsley, bay leaves, and olive oil.
Add enough water to cover the ingredients and cook over high heat.
Bring to a boil, then reduce to a simmer.
Skim off any foam from the cooking beans.
Simmer, loosely covered, until beans are tender (about 90 minutes), adding water as needed.
Place the clams in a separate skillet with about 1 inch of water, cover and cook over medium heat until they open (about 10 minutes), shaking occasionally.
Remove opened clams to a bowl as they open.
Reserve the clam broth from the skillet.
Strain the clam broth through a cloth if it contains grit or shell fragments.
Add the reserved clam broth to the simmering beans, then stir in saffron (or yellow food coloring), remaining parsley, paprika, and salt to taste.
Cover and cook for 5–10 minutes.
Ladle the beans and broth into bowls and place six clams in each bowl.
Serve with crusty bread on the side.
