Combine olive oil, balsamic vinegar or lime juice, tarragon, salt and pepper in a flat container to make the marinade.
Pour the marinade over the tuna steaks and turn to coat all sides.
Cover the container with plastic wrap and refrigerate for at least 1 hour.
Spray a clean grill or grilling container with non-stick cooking spray.
Drain and reserve the excess marinade from the tuna.
Grill the tuna about 4 minutes per side, until charred outside but slightly pink inside.
Place steaks on individual plates and pour the reserved marinade over them.
Serve with steamed vegetables, steamed rice, or a spinach salad.
