Pork

Preheat oven to 450°F and wash and dry potatoes, red onions, garlic, and lime
Cut potatoes into 1/2-inch wedges, toss with a drizzle of vegetable oil, salt, and pepper, and roast until browned and tender (20–25 minutes)
Halve and peel red onion; slice as thinly as possible for pickling and finely chop the remaining onion
Peel and finely chop garlic
Halve lime and squeeze juice into a small bowl
Halve bread buns and brush cut sides with melted butter
Add sliced onion, sugar, and a pinch of salt to the lime juice, stir to quick-pickle, and set aside
Heat a drizzle of vegetable oil in a large pan over medium-high heat
Add chopped onion, season with salt and pepper, and cook until softened (4–5 minutes)
Add chopped garlic and cook until fragrant (about 30 seconds)
Add pork, season with salt and pepper, and cook, breaking up meat, until browned and cooked through (4–6 minutes)
Combine barbeque sauce, ketchup, sugar, and some pickling liquid in a small bowl, add the mixture to the pan, and cook until thickened (2–3 minutes); taste and season with salt and pepper
Toast buns until golden (3–5 minutes)
Fill toasted buns with the BBQ pork, top with pickled onion and hot sauce, and serve with potato wedges
