Pork

Place spare ribs in a large baking dish in one layer.
Combine soy sauce, honey, hoisin sauce, white vinegar, sake, minced garlic, sugar, white pepper, pork stock, black pepper, salt and cumin in a small bowl.
Pour the mixture over the spare ribs and coat both sides.
Marinate overnight, basting occasionally.
Preheat the oven to 375°F.
Place a large shallow roasting pan on the oven bottom, fill with 0.5 inches water, and put the spare ribs on a roasting rack.
Roast ribs for 45 minutes.
Raise oven temperature to 450°F and roast for 15 more minutes.
Serve hot or cold, seasoning with salt and freshly ground black pepper to taste.
