Starter

Bloom the yeast by combining dry active yeast and honey in about 8 oz warm water with milk.
Sift in and mix the all-purpose flour, rice flour, and tapioca starch into the liquid.
Add salt and sugar, and begin combining the dough with an oiled spatula, adding flour until it starts to come together.
Knead the dough, adding flour as needed and oiling hands if sticky.
Add up to 1 tbsp vegetable oil if needed and continue kneading until the dough is elastic.
Place the dough in a covered food-safe container to rise.
Let the dough rise in a warm place for around 2 hours or until it no longer bounces back when poked.
Combine tuna, pineapple pieces, peanuts and seasoning powder and mix until the tuna becomes paste-like.
Add a little barbecue sauce to the filling to moisten (not too wet).
Optionally add 1 tbsp canned pineapple juice to sweeten the filling.
Add spicy mustard to taste.
Let the filling rest uncovered for around 2 hours.
Portion the risen dough into pieces slightly larger than a golf ball and flatten each piece (don’t make too thin).
Place filling onto each flattened dough piece and fold closed by pinching the edges to seal.
Arrange buns in a steamer over boiling water and steam for 10–12 minutes.
Serve the bao buns hot.
