Mix the active dry yeast with 3/4 cup warm water and let stand a few minutes to activate the yeast.
Add 1 cup flour, 2 tbsp olive oil, 1 tbsp sugar and 1/2 tsp salt to the activated yeast and mix into a smooth batter.
Add the additional 3 cups flour and ~1 cup warm water and mix until you have a slightly sticky dough.
Knead the dough until it springs slightly when touched.
Let the dough rise in a greased bowl in a warm location until doubled, then punch down the dough.
Transfer the dough to a floured surface and roll or shape it to fit a pizza pan, forming an edge and making the crust thicker for deep dish.
Preheat the oven to 425°F.
Spread pizza sauce on the dough leaving the edge uncoated and add any desired optional toppings.
Sprinkle shredded mozzarella evenly over the pizza, leaving the edge crust untouched; optionally sprinkle Parmesan and Romano over the toppings.
Bake the pizza on a rack in the preheated oven for 25–30 minutes or until the crust and cheese are lightly brown; if the outer crust browns too quickly, line the edge with aluminum foil.
Remove from the oven and cut into about 8 triangular slices to serve.
