Combine all ingredients in a bowl except 1 egg and mix until a smooth dough is obtained.
Place the last egg in a cup or small bowl and beat it.
Divide the dough into 5–6 portions; take one portion and roll it out about 3 mm thick.
Cut shapes with cookie cutters and transfer cookies to a parchment-lined baking sheet.
Brush or glaze the cookies with the beaten egg when the baking sheet is full.
Bake at 350°F until the cookies are light brown, a few minutes.
Repeat rolling, cutting, and baking with the remaining dough.
Mix the egg white and powdered sugar to make an icing, adding more sugar if needed to firm it.
Place the icing in a piping bag or plastic bag and cut a small (~1 mm) hole in the tip.
Pipe the icing to decorate the cookies.
